"Gavin Kaysen took over last fall for Bertrand Chemel, who was a tough act to follow. He swiftly put his stamp on a kitchen serving a complex menu to some of the town's most demanding customers seven days a week. Almost every dish I've had has blown me away. Unpretentiously elegant Cafe Boulud has always been as discreetly creative as Gotham Bar & Grill and Gramercy Tavern - places with more buzz than the downtown-fixated Culinary-Promotional Complex cares to bestow north of 59th Street.
Its spirit has always been Modern-American, but with classic French discipline and cooking methods applied to the seasonal bounty. Its four long-established menu categories - market-inspired, "world cuisine," classics and country, and seasonal - were never meant for uptown's more timid tastes."

This is Daniel Boulud's celebration of his original family-owned café and restaurant in Lyon, France. The dining menu is comprised of four unique themes; La Tradition includes Boulud's family recipes dating back generations; La Saison that reflects seasonable market ingredients; Le Potager concentrates on vegetables; and Le Voyage embraces international dishes.
