Luxury items - caviar from the Caspian Sea, truffles from France, pumpkin oil form Austria - punctuate a menu that shows off a modern twist. The kitchen creates seasonal dishes with a nice balance of texture, taste and contrast."

Ed Brown always wanted to own his own restaurant (which is probably true of almost 100% of the executive chef population). He seized the opportunity and did everything right. It's working big-time as his appearance in the latest Michelin Guide clearly demonstrates. His specialty is seafood (he served as executive chef at Sea Grill for 14 years) and he seems to do everything else just as well. The good chef is a winner and may Eighty One last at least 81 years.
